Steve Adelman
Founder & Owner
With a career, spanning over 18 years in nightlife, restaurants, residential development and the music industry, Steve Adelman has gained a reputation for combining no-holds-barred creativity and bottom line economics into pioneering projects nationwide. Possessing a near legendary sixth sense for "what's next to come," he has proven that whether it's a mega-dance clubs or intimate restaurants he has the Midas touch in developing brands that not only capture the public's imagination but have staying power as well.
Hailing from Bay City, Michigan, Adelman received a B.A. in Economics from Kalamazoo College in 1984. He moved to Boston for graduate work at Boston College earning a Master's Degree in Microeconomics in 1986. Soon after beginning his doctoral dissertation, also at Boston College, he decided to gain hands on experience and became an economic consultant for Boston's prestigious Charles River Associates. With a successful consulting stint behind him, Adelman decided to reassess his direction. It was then that friends encouraged him to join them in a nightclub project called the HUB CLUB in downtown Boston. Though the low-key Adelman was not a clubber, he appreciated that the venture utilized both his imagination and financial acumen. It was a good fit.
In 1990, Adelman moved to New York City to open THE ROXY, serving as director of the 25,000-square foot venue. THE ROXY soon gained a worldwide reputation as Gotham's top club. Only one year later, Lansdowne Entertainment, impressed by his rapid success, tabbed him as director of the LIMELIGHT where he instituted two legendary rock nights, 'Rock and Roll Church' and 'Communion'. Under Adelman, the LIMELIGHT soon found itself playing host to musical legends including Bon Jovi, Pearl Jam and James Addiction.
Upon Lansdowne's purchase of the PALLADIUM in 1993 and the building of CLUB USA in 1994, Adelman became director of all three locations. In 1995, the impresario launched the mega-club TUNNEL, which immediately was recognized as the country's leading nightlife venue. Adelman was at the vanguard of the New York club scene, pioneering the introduction of hip-hop music to mainstream audiences, and the first to book superstar DJ acts like Paul Oakenfold, Sasha, and John Digweed. The world's best known DJs and musicians defined Adelman's venues musically while celebrities such and other high-profile music, fashion and entertainment icons consistently made them their regular stomping grounds. In 1996, Adelman was dubbed by the media as "New York's King of Clubs," a short seven years after breaking into the business.
In 1997, Adelman returned to Boston to open AVALON, WHICH became an instant national success. Over the next four years, Adelman revolutionized Boston's nightlife by building four more clubs: AXIS, THE MODERN (a sleek bar/lounge designed by renowned architect Carlos Zapata), AND EMBASSY AND BILL'S BAR.
In September 2002, Adelman bought the PALACE theater in Hollywood and the LIMELIGHT (the same venue he directed ten years earlier) in New York City. After one year and ten million dollars in construction and renovations, he launched the AVALON brand in New York and Los Angeles, along with the exclusive Moroccan themed lounge, SPIDER CLUB. AVALON Hollywood now also boasts a restaurant and late night bistro called HONEY. Under Adelman's eye, AVALON became the largest privately held nightclub brand of its kind.
In 2007, Adelman completed a three-year renovation of the landmark HILLVIEW BUILDING, built by Sam Goldwyn in 1917 to house contract actors like Charlie Chaplin and Stan Laurel. Hillview now boasts 50 luxurious apartments along with Adelman's new bistro LIFT and his private training gym, THE JOINT. Adelman launched 86 DINING HOUSE AND CABARET, the historic basement space that was once Rudolf Valentino's speakeasy, in January 2008 as the crowning jewel of the Hillview project. The Dining House/speakeasy features unique live entertainment combined with grand cocktailing, a unique Adelman concept for the Hollywood celebutante crowd. Also in 2007, Adelman joined forces with legendary music producer Michael Lloyd to form LA Management, a full-serve artist management company. He also sits on the board of UnsignedArtist.com, a website community aimed at supporting up and coming musicians.
Never content to rest on his accomplishments, Adelman is currently building THE REGENT, a concert/nightlife/restaurant venue in downtown Los Angeles, a first of its kind in both scope and concept for that area.
With all his free time, Adelman works on his true passion, writing comedic scripts for both movie and television in the hope that he may make it someday in Hollywood.
Keith Silverton
Executive Chef
Before arriving in Los Angeles in 1998, Keith cooked his way through San Francisco Bay Area restaurant landmarks such as Mark Miller's Fourth Street Grill, Jeremiah Tower's Stars and James Ormsby's Bruno's restaurants.
Once in Los Angeles, he opened Cyrano with a French-Mediterranean menu where he attracted a European clientele and his own local following. It was also at Cyrano where he began his relationships with many of the Los Angeles restaurateurs, chefs and purveyors. From Cyrano he made the move to work with ex-Patina compatriots, Jon Fernow and Rainer Schwartz at Cienega.
In June of 2000, Keith partnered with promoter cum restaurateur, Jon Sidel, at Dominick's. Sidel is often credited with being a pioneer of creating the blend of restaurant unique only to LA; one that offers great food in a club-like atmosphere. Upon meeting, the two hit it off instantly and Keith became Executive Chef of Dominick's until it changed hands in 2003.
The Seasonal American menu at Dominick's was created for the specific clientele of the busy restaurant. The menu reflected the culmination of California's freshest ingredients. Keith's preference for "clean" flavors and cooking within the seasons were also apparent in his menu that did not follow trends, but rather followed farmers' harvests.
At Dominick's, Keith developed a series of monthly food celebrations partnering with his top suppliers and wineries. The summertime "Drop-Top Dinners" were 3-day festivals of wine, food and fun that created a loyal following of LA foodies.
In January 2004, Keith opened the Spider Club at Avalon Hollywood along with owners Steve Adelman and John Lyons. Keith's menu complemented the lounge-style atmosphere and catered to its celebrity clientele. The club's exclusivity has made it a favorite place for red carpet events and still remains one of the hottest clubs in Hollywood. In addition to the Spider Club, Keith oversaw all special event and artist catering for the Avalon.
In January of 2006, restaurateurs, the Smith Brothers, recruited Keith to run Smitty's Grill in Pasadena.
